- Prepare and clean the leg of lamb, making cuts for flavor absorption. Split the leg if too large for the oven.
- Chop the apple, potatoes, carrot, onion, and garlic.
- Mix cumin powder, cumin seeds, salt, chili powder, and soy sauce in a bowl.
- Add cooking wine to the mixture.
- Apply the marinade evenly on the lamb, massaging it in. Marinate for at least 5 hours, preferably overnight.
