Norwegian Arctic Cod and Pork Jade Dumplings

- 100g Flour
- 80g Norwegian Arctic Cod
- 100g Pork Mince
- 2 Bunches of Greens
- 1 Tablespoon Oil
- 1 Tablespoon Baby Soy Sauce
- 25g Water
- 25g Spinach Juice
- 2 Slices of Lemon
- Prepare all ingredients.
- Mix 50g of flour with cool water and another 50g with spinach juice to form two different colored smooth doughs. Rest the doughs for 200 minutes.
- Naturally thaw the cod, rinse with water, and marinate in lemon juice for 10 minutes.
- Finely chop the cod.
- Blanch the greens, squeeze out excess water, and chop finely.
- In a bowl, combine the cod, pork mince, and baby soy sauce.
- Add the chopped greens and mix well.
- Knead the rested doughs again. Wrap the green dough in the white dough and cut into small, even pieces.
- Flatten each piece into dumpling wrappers, add the filling, fold and seal.
- Prepare all the dumplings.
- Boil water, add dumplings. When they float, add cold water three times, and simmer for 2 minutes before removing.
