Drunken Spiced Razor Clams

- Razor Clams (毛蚶) - 700g
- Selected Drunken Marinade Sauce (珍选醉卤捞汁) - 70ml
- Oyster Sauce (蚝油) - 1/4 Spoon
- White Vinegar (白醋) - 35ml
- Mustard Oil (芥末油) - 5ml
- Green Onion (香葱) - 1
- Cilantro (香菜) - 1
- Homemade Chili Oil (自制辣椒油) - 2 Spoons
- Soak the razor clams in salt water for over 30 minutes.
- Rinse and soak in clean water to remove sand.
- Boil in water with green onion leaves.
- Turn off the heat once the clams open.
- Remove and let cool.
- Extract the meat from the clams and mix with chopped green onions.
- Add the selected drunken marinade sauce.
- Mix well and wrap with cling film; chill in the fridge for 20 minutes.
- Take out from the fridge and add oyster sauce; mix well.
- Add white vinegar to balance the sweetness of the sauce.
- Mix in mustard oil for added flavor.
- Add homemade chili oil.
- Mix in chopped cilantro.
- Mix well and taste – it should be superb.
- Plate and serve. The drunken spiced razor clams are ready.
