Delicious Raw Marinated Mud Crab

- 1 live mud crab
- Minced ginger, to taste
- 1-2 cloves of minced garlic
- Chopped onion, to taste
- 3 green onions
- Small hot peppers (optional), to taste
- Selected raw marinating sauce, as needed
- Clean the live mud crab by removing rubber bands and any string-like material. Hold the crab securely and brush it clean under running water. If using tap water, rinse with boiled cool water afterwards.
- Cut the crab in half and soak it in 50-60°C white wine for about 25 minutes.
- After soaking, place the crab in a clean container. On a clean chopping board, finely chop ginger, garlic, onion, hot peppers, and green onions. Add these to the container with the crab, then pour in enough raw marinating sauce to cover the crab. Seal with plastic wrap and marinate for at least 4 hours, refrigerating in summer.
