- White pepper powder (½ tablespoon)
- Cooking oil (as needed)
- Bean paste (to taste, optional)
- Chicken essence (to taste, optional)
- Cornstarch mixed with water (for thickening)
- Szechuan peppercorn oil (to taste, optional)
- Thirteen spices (to taste, optional)
- Clean the tilapia and make diagonal cuts on its surface. Season it with a mixture of salt, cooking wine, and pepper powder. Rub the mixture evenly over the fish.
- Heat oil in a pan, add a pinch of salt to prevent sticking, and fry the tilapia until both sides are golden brown. Remove and drain the oil.
- In the same pan, leave some oil and sauté ginger and garlic. Add bean paste if desired, and stir-fry until fragrant. Pour in enough water and season with soy sauce, white pepper powder, and thirteen spices.
- Place the fish back into the pan, add chicken essence if desired, and simmer until cooked. Remove the fish onto a plate. In the remaining sauce, add water-mixed cornstarch to thicken, and add Szechuan peppercorn oil and chopped green onions. Stir well and pour over the fish.
