- Prepare the ingredients: soak the mushrooms in warm water. Prepare scallions, ginger, garlic, and chili peppers.
- Add water and chicken pieces to a pot, along with cooking wine, and bring to a boil over high heat.
- Skim off the foam and remove the chicken.
