Notes
- 1 whole chicken
- 1 potato
- 1 carrot
- 1 onion
- 1 corn on the cob
- 5g salt
- 1 tomato
- 4 shiitake mushrooms
- 2 tablespoons light soy sauce (preferably Tai Tai Le brand)
- 1 tablespoon oyster sauce (preferably Tai Tai Le brand)
- 30ml banquet cooking wine (preferably Tai Tai Le brand)
- A pinch of chicken essence (preferably Tai Tai Le brand)
- 20g butter
- 1 tablespoon honey
- 100g barbecue sauce
- 1 piece of ginger
- Prepare all ingredients: clean the chicken, slice the onion and ginger.
- Poke holes in the chicken for better flavor absorption. Marinate with salt, cooking wine, soy sauce, oyster sauce, and chicken essence, adding onion slices.
- Add ginger slices and barbecue sauce to the marinade.
- Massage the chicken thoroughly and let it marinate overnight, covered with plastic wrap.
- The next day, press down on the chicken to ensure even marinating and prepare the vegetables.
- Clean and chop the vegetables into chunks. Parboil potatoes, corn, and broccoli until 70% cooked.
- Preheat the oven to 180°C (356°F).
- Mix butter and honey together. Drain the marinated chicken and place it on a roasting rack. Brush with the butter-honey mixture and roast in the preheated oven for about 70 minutes. Cover with foil if it browns too quickly.
- After 20 minutes, turn the chicken over and continue roasting. Lay foil in the baking tray, add the vegetables, and season with salt. Place the chicken on top and continue roasting.
