Sesame Mantou (Chinese Steamed Buns)
Notes
- 500g all-purpose flour
- 5g dry yeast
- 80g sugar (optional)
- 30-50g black sesame seeds, ground
- 270g milk or water, adjust as needed
- Prepare the ingredients. Grind the sesame seeds roughly. Sugar is optional. Dissolve yeast in milk or water until there are no lumps.
- Mix the ground sesame seeds and sugar (if using) into the flour. Gradually add the milk or water, stirring continuously until the mixture forms lumps.
- After mixing into a dough, cover and let it rest for 10 minutes to absorb moisture better, making it easier to knead.
- Knead the dough until smooth. If using a dough press, knead until there are no air pockets inside. (Kneading is similar to washing clothes: keep folding and pressing the dough.)
- After kneading, flatten the dough, roll it up, cut it into pieces, and place them in a steamer. Let them rise at room temperature until they slowly spring back when pressed.
- Once risen, start with cold water and steam for 18 minutes. After turning off the heat, let them sit for an additional 3 minutes.
