Tom Yum Seafood Soup

- 2 packs of Tom Yum paste
- Shrimp, as needed
- Clams, as needed
- Seafood mushrooms, as needed
- Tofu, as needed
- Crab mushrooms, as needed
- 1 Tomato
- 1 Lemon
- Bird's eye chili (small chili), as needed
- Cilantro (coriander), as needed
- 10g of seasoning sauce
- Oil (preferably Camellia oil)
- Clean all seafood. Dehead and devein shrimp.
- Chop tomato into chunks, cut Chinese cabbage into strips, and slice and deseed the lemon.
- Clean seafood mushrooms, crab mushrooms, cilantro, and chili pepper.
- In a pot, heat oil and sauté shrimp heads until fragrant and oil turns red.
- Add 1000ml of water and bring to a boil with the lid on.
- Remove shrimp heads, then add 1-2 packs of Tom Yum paste.
- Add the seasoning sauce (and soy sauce if preferred) to enhance flavor and reduce fishy smell.
- Once boiling, add tomatoes, tofu, Chinese cabbage, seafood mushrooms, crab mushrooms, and other vegetables of your choice.
- Bring to a boil again and add clams, shrimp, and other seafood. Cook until seafood is done.
- Squeeze in some lemon juice, sprinkle bird's eye chili and cilantro, and garnish with lemon slices before serving.
