- Hairtail fish (鲅鱼), 3 jin (approx. 1.5 kg)
- Pure tomato sauce, 300 grams
- Green onions, ginger, garlic (3 times the usual amount for stir-frying)
- Sichuan peppercorns, to taste
- Star anise, 1 piece
- Bay leaf, 1 piece
- White sugar, 1 tablespoon
- White vinegar, a small amount
- Dry the fish with kitchen paper towels to prevent oil splatter. Heat the oil and add a little cool oil before frying the fish on medium heat. Fry until the skin hardens, then flip.
- Flip the fish as soon as it's fried on one side.
- Place the fish in a pressure cooker.
- Heat new oil, fry green onions, ginger, garlic, star anise, and bay leaf until fragrant. Add tomato sauce, sugar, salt, soy sauce, and chicken essence to taste. Pour this sauce into the pressure cooker.
