Bitter Melon, Salted Vegetable, and Soybean Stew with Pork Belly

- 400g pork belly
- 1 small cup of soybeans
- 80g salted vegetables
- 1 medium spoonful of cooking wine
- 5 shiitake mushrooms
- 5 slices of ginger
- 8 cloves of garlic
- 15g vegetable oil
- 500g water
- Prepare all ingredients.
- Wash and soak shiitake mushrooms in water.
- Rinse soybeans and salted vegetables in a strainer.
- Slice soaked mushrooms, pork belly into 0.5cm slices, deseed and chop bitter melon, and slice salted vegetables, ginger, and garlic.
- Heat oil in a pot and sauté ginger and garlic until fragrant.
- Add mushroom slices and stir-fry until fragrant.
- Add pork belly slices and fry until they release fat.
- Stir in a spoonful of cooking wine and mix well.
- Add salted vegetables and stir-fry until fragrant.
- Pour 500ml of water into the pot.
- Add all stir-fried ingredients into the pot, along with soybeans and bitter melon.
- Cook on high heat then reduce to medium and stew for 30 minutes.
- Dish is ready to serve.
