Its massive capacity, equivalent to the size of a basset hound, can be daunting at first, especially when trying to find storage space. However, once you find the right spot, it’s totally worth the effort. I’ve utilized it multiple times for processing tomatoes, apples, and peaches, and always find myself running out of jars due to its vast capacity.
One thing to note is that the sides heat up much faster than the bottom. A minor oversight on my part was forgetting to add water between the heating element and the insert pan during my initial use. While this resulted in some scarring on the inside, it did fade over time. Cleaning can be a challenge, especially with stubborn scum, but with a little effort and the right tools, it comes off.
An update to my initial review: We received a replacement roaster and immediately put it to use. Given the desert climate where I reside and the challenges with cooling, we opted to set it up outdoors. We followed the manufacturer’s recommendation to heat it at max temperature for an hour to burn off any residual grease. The following day, we used it to cook a half ham. Its performance was so impressive that even the neighbors took notice and inquired about purchasing one for themselves.
I’ve owned a NESCO roaster for a long time and decided to upgrade. While I didn’t notice any residue burning off after the recommended one-hour smoke-out, the device still performed exceptionally well. My first task was cooking two chickens, followed by making bone broth from the remains. I did notice some temperature discrepancies and would advise potential buyers to invest in an external temperature gauge for accuracy. On the downside, some stubborn burnt spots were challenging to clean.
It’s worth noting that while the design appears more compact, it still boasts an 18-quart capacity. This makes it perfect for those who are looking to save on space without compromising on volume. Despite a minor issue with one of the feet causing a wobble, the device functions as expected. Its affordable price point, considering the minor damage, is a bonus.
Having owned one of these roasters for several years, I found it so useful that I even purchased one for my grandson. He often borrowed mine for work potlucks, where he showcased his special dishes. Unfortunately, there was a minor chip due to shipping, but overall, this roaster is a must-have, especially for those who can tomatoes or host parties.
