Putian Braised Noodles Recipe

Notes

Ingredients:
  • Dried braised noodles (4 servings)
  • Pork leg meat, 350g
  • Fresh shrimp, 500g
  • Oysters, 250g
  • Dried scallops, 1 handful
  • Dried mushrooms, 1 handful
  • Half an onion
  • Green onion, 1 segment
  • Ginger, 5 slices
  • Carrot, half
  • Chinese cabbage, 5 leaves
  • Green vegetables, 1 bunch
  • Celery, 5 stalks
  • Spring onions, 3 stalks
  • Cooking oil, as needed
  • Cooking wine, half a ladle
  • Soy sauce, 1 ladle
  • Salt, 1.5-2 spoons (adjust to taste)
  • Chicken essence (e.g., Totole), as needed
  • Water, 3 ladles
Instructions:
  1. Prepare the ingredients: Slice the pork, julienne the onion and carrot, mince the green onion and ginger, clean the oysters and drain, soak and chop the dried scallops and mushrooms, wash and cut the Chinese cabbage, clean and drain the shrimp.
  2. Wash and drain the green vegetables and celery, chop the celery and cut the spring onions into segments.
  3. Heat oil in a pan, stir-fry the pork slices until golden brown, add the dried scallops, dried mushrooms, and shrimp, and stir-fry evenly. Then add onion, green onion, ginger, and carrot strips, and stir-fry until fragrant.
  4. Drizzle cooking wine and soy sauce around the edge of the pan. After stir-frying until fragrant, add Chinese cabbage and soften it, season with salt, then add sufficient boiling water and cook for about 5 minutes to blend the flavors. Taste and adjust the saltiness if necessary.
  5. Add the dried braised noodles and cook for about 5 minutes until they are nearly done. Add the green vegetables and oysters. Once the oysters are cooked, add celery and spring onions, season with chicken essence, and mix well. The noodles should be perfectly cooked by now, with a full pot.
  6. Enjoy the hometown flavor, a staple at local banquets, especially in rural feasts!
  7. Final product should have a slightly sticky sauce, rich and sweet, with noodles absorbing the flavors of the various ingredients.
  8. This dish was prepared with dried braised noodles for the first time, resulting in a pot that was completely devoured!
