Sand Ginger Braised Pork Trotters

Notes

Ingredients:
  • Pork trotters (front) - ½ piece
  • Ginger - 1 piece
  • Garlic - 1 head
  • Sand ginger - as needed
  • Oil - as needed
  • Salt - 3 grams
  • Soy sauce - 2 tablespoons
  • Dark soy sauce - ½ tablespoon
  • Cooking wine - 1 tablespoon
  • Fresh chicken juice - as needed
  • Pepper powder - 1 spoon
  • Rock sugar - 5 grams
< Instructions:
  1. Chop the pork trotters into pieces.
  2. Prepare the ingredients: ginger, garlic, and sand ginger.
  3. Blanch the pork trotters in cold water with ginger slices and cooking wine.
  4. After blanching, remove the pork trotters.
  5. Heat oil in a pan and sauté the ginger and garlic until fragrant.
  6. Add the pork trotters and stir-fry to dry off the water.
  7. Add salt, soy sauce, dark soy sauce, cooking wine, chicken juice, pepper powder, and rock sugar for seasoning.
  8. Stir in the sand ginger until it releases its aroma.
  9. Add enough water to cover and bring to a boil.
  10. Transfer the contents to a pressure cooker.
  11. Cook over high heat until it boils, then reduce to medium-low heat and cook for 15 minutes.
  12. Once done, the water should be just evaporated, and then remove from heat.
  13. Your delicious Sand Ginger Braised Pork Trotters are ready, characterized by their fragrant aroma and tender texture.
