Stir-Fried Pork with Mushrooms

Notes

Ingredients:
  • Lean pork slices (tenderloin) - 150g
  • Salt - 1 tablespoon
  • Mushrooms - 8 pieces
  • Garlic sprouts - 2
  • Spring onions, ginger, garlic - as needed (for marinating)
  • Seasoning sauce (for marinating):
  • - Cooking wine - 1 tablespoon
  • - Chicken essence - a pinch
  • - Salt - to taste
  • - Pepper powder - a pinch
  • - Soy sauce - to taste
  • - Cornstarch - 1 tablespoon
  • - Cooking oil - as needed
  • Seasoning sauce (for cooking):
  • - Soy sauce - 1 tablespoon
  • - Dark soy sauce - ½ tablespoon
  • - Chicken essence - a pinch
  • - Cooking wine - 1 large tablespoon
  • - Sesame oil - as needed
  • - Oyster sauce - as needed
  • - Cornstarch - 1 tablespoon
  • - Water - ½ bowl
Instructions:
  1. Clean the mushrooms with salt and cut them into thick slices. Peel and slice the carrots. Set aside.
  2. Boil water and add the mushrooms and carrot slices with a tablespoon of salt and a little cooking oil. Blanch for one minute, then rinse with cold water and set aside.
  3. Marinate the pork slices with cooking wine, chicken essence, salt, pepper powder, soy sauce, then add cornstarch and a sufficient amount of cooking oil. Mix well and let it marinate for ten minutes.
  4. Mix together all the ingredients for the cooking seasoning sauce: salt, chicken essence, soy sauce, dark soy sauce, cooking wine, sesame oil, oyster sauce, cornstarch, and water.
  5. Heat a pan with oil, then stir-fry the marinated pork until it changes color.
  6. Add spring onions, ginger, and garlic, frying until aromatic.
  7. Add the blanched mushrooms and carrot slices, stir-fry for one minute.
  8. Pour in the mixed seasoning sauce and stir well.
  9. Finally, add the garlic sprouts and stir-fry until fragrant and evenly mixed.
  10. Ready to serve!
